Gluten free Banana Bread

Hi Guys. This time I’ve decided to create a delicious, healthy and easy to make gluten free banana bread. If you are looking for a sweet ( but not too sweet ) breakfast option or a healthy snack for your afternoon tea, this could be a recipe for you. Creating my recipes I need to be sure that all of the ingredients used to make it are healthy and nutrient-dense, but also tasty at the same time. This one is no different… Additionally, you can adjust the amount of sugar and bananas as per your own taste. Remember… you can always try different types of gluten free flour as an alternative to regular wheat one.

Two cups of gluten free flour
4 medium bananas
1 teaspoon of baking powder
4 eggs
½ cup of butter or olive oil
½ cup of xylitol – healthy sugar alternative (or brown sugar)
¼ teaspoon of salt
Optional: ½ cup of walnuts


1. Preheat oven to 180°C (gas mark 4). Grease a loaf pan or line it with a non-stick baking parchment.
2. In a large bowl, mix prepared bananas, eggs, xylitol and oil.
3. In a separate bowl, combine flour with baking powder and salt and add to the rest of your ingredients.
4. Mix thoroughly, you can add chopped walnuts (optional).
5, Pour the ingredients into a prepared earlier loaf pan.
6. Bake at 180°C for about 50 min until the toothpick or fork inserted in the center come out clean.

Leave your banana bread to cool for a few minutes and slice thickly. You can eat banana bread itself or with butter, nut butter, coconut jam or coconut yogurt combined with maple syrup.
I love the combination of a coconut flavor along with the walnuts and sweetness of my freshly baked banana bread.
